We are in the middle of the summer season this year. As the weather gets hotter, do not let the heat affect your appetite or desire to eat! People often tend to eat lighter and cooler food during hot weather, but this is not always enough. The sweet and sour flavor from tomatoes makes a good supplement. Here at Each Green Corner, we want to help our local communities to eat healthy and get the nutrients necessary for the body even during this hot season. Here are some delicious and light recipe recommendations!
Appetizer
Pico de Gallo is a Mexican style dips and Salsa made with tomatoes, onions, and fresh cilantro and lime juice. This would be a wonderful choice for an appetizer served with chips, or as a snack in the afternoon. You may add some jalapeño for a mild spice. Start making it by following this recipe.
Salad
As shown in the cover image, this Panzanella Salad is the ultimate dish for summer time. With a few simple ingredients like tomatoes, your favorite fruit, and corn, you can make this salad real fast. For the recipe, click here!
Main Dish
For the main course, let’s keep it light with a tomato quiche. A few quiche pies would be about the right amount to satisfy your appetite! It is healthy and contains all the nutrients you need for the day. For a faster preparation process, you may get your quiche crust from your local grocery stores. Check out this website for details!
